Veggie Rice Chowder
This is one of the most warm, satisfying, and filling bowls of chowder that you will ever find. This recipe is comfort food at its finest, and is overflowing with flavor! Not to mention all of the vitamins and minerals you get from all the vegetables, making this chowder a very healthy choice. The tasty, melt-in-your-mouth potatoes and carrots, along with the sweetness of the corn, and everything in between, make this recipe one of my favorites to make. It is as simple as throwing all the ingredients in a pot, and letting them mingle together for a while! This is also a fantastic recipe to cook in advance and eat throughout the week. Like any soup, it tastes better every day!

Veggie Rice Chowder
Ingredients
- 3 small russet potatoes
- 2 carrots
- 1 celery stalk
- 1 cup dry brown rice
- 1/2 cup white onion
- 1/2 cup corn
- 6 cups oat milk
- 3 cups vegetable broth
- 1 tbsp olive oil
- 1 tbsp salt
- 1 tsp pepper
- 1 tsp dried basil
- 1 tsp garlic powder
Instructions
- First, add olive oil to a pot on medium high heat. Cut potatoes, carrots, and celery into bite size pieces and add to the pot. Cook for 10 minutes, stirring occasionally.
- Next, add corn and onion to the pot and cook for an additional 5 minutes.
- Then add almond milk, broth, rice, and all seasonings to the pot and bring to a boil.
- Once it is boiling, turn the heat down to low and let it cook, covered, for 45 minutes, stirring occasionally.
- Serve into bowls and enjoy!
