Buffalo Cauliflower Lettuce Wraps

The spicy cauliflower contrasts perfectly with the crisp lettuce, fresh cilantro, and cool sour cream. Using lettuce instead of tortillas saves you a significant amount of calories, and adds that crunch that is so satisfying. The cauliflower can be made beforehand and it makes a lot, so you can make these wraps for the whole family, or keep the leftover cauliflower in the fridge for easy lunches throughout the week! They are easy to assemble and fun to eat!

These lettuce wraps give you the spicy kick you are looking for, while being the fresh, healthy meal you deserve!

Ingredients

  • 1 bag frozen cauliflower
  • 4 leaves romaine lettuce
  • 1/2 cup buffalo sauce
  • 4 tbsp red onion
  • 4 tbsp cilantro
  • 4 tbsp sour cream

Instructions

  1. Start by taking the frozen cauliflower and placing it in a bowl. Add 1/2 cup of buffalo sauce and coat the cauliflower evenly. Set aside the buffalo sauce that is leftover in the bottom of the bowl.
  2. Add the cauliflower to an air fryer and cook at 400 degrees for 15 minutes. Then take it out and add it back to the bowl and coat it again with the leftover sauce.
  3. Add the cauliflower back to the air fryer and cook for another 15 minutes.
  4. While that is cooking, dice 4 tbsp worth of red onion. Do the same with the cilantro.
  5. Once the cauliflower is done, assemble your lettuce wraps.
  6. First, add the cauliflower evenly between the 4 romaine leaves. Then top that with the red onion, the cilantro, and finally, the sour cream.
  7. Roll each one up and enjoy!
