This baked potato is stuffed with Mexican-style flavors, both sweet, savory, and spicy. Ingredients
- 1 large russet potato
- 1/2 cup black beans
- 1/3 cup shredded cheddar cheese
- 1/3 cup sweet and spicy pico
- 2 tbsp sour cream
- Sriracha
Instructions
- Start by carefully piercing the potato twice on both sides with a knife.
- Next take a wet paper towel and wrap it around the potato. Microwave for 2 minutes, then flip it over and cook for 2 more minutes. Press on the potato to see if it is the softness you desire. If it still feels hard, continue microwaving for 1 minute per side until it is ready. The timing will differ slightly depending on the size of your potato, but you do not want to over cook it.
- Once the potato is cooked, carefully slice it horizontally and give it a squeeze on each side to open it up.
- Next, make sure your black beans have been rinsed off in a strainer. Place them in a microwave safe bowl for 30 seconds to warm up.
- Pour black beans into the middle of the potato, followed by the cheddar cheese and pico.
- Top it off with the sour cream and sriracha (optional) and enjoy!
