This baked potato is stuffed with Mexican-style flavors, both sweet, savory, and spicy.

Ingredients

  • 1 large russet potato
  • 1/2 cup black beans
  • 1/3 cup shredded cheddar cheese
  • 1/3 cup sweet and spicy pico
  • 2 tbsp sour cream
  • Sriracha

Instructions

  1. Start by carefully piercing the potato twice on both sides with a knife.
  2. Next take a wet paper towel and wrap it around the potato. Microwave for 2 minutes, then flip it over and cook for 2 more minutes. Press on the potato to see if it is the softness you desire. If it still feels hard, continue microwaving for 1 minute per side until it is ready. The timing will differ slightly depending on the size of your potato, but you do not want to over cook it.
  3. Once the potato is cooked, carefully slice it horizontally and give it a squeeze on each side to open it up.
  4. Next, make sure your black beans have been rinsed off in a strainer. Place them in a microwave safe bowl for 30 seconds to warm up.
  5. Pour black beans into the middle of the potato, followed by the cheddar cheese and pico.
  6. Top it off with the sour cream and sriracha (optional) and enjoy!
