This recipe can also be tailored to your liking, so don’t be afraid to add hot sauce or jalapenos for a spicy kick, or make it vegan by opting for dairy-free yogurt and vegan shredded cheese. Vegetarian Crunch Wrap
Ingredients
- 1/4 package Impossible Ground Beef
- 1/4 cup pinto beans
- 1/4 shredded cheddar cheese
- 1.25 large tortillas
- 1 tostada shell
- 1/2 cup lettuce
- 1 tbsp diced tomato
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1 tbsp sour cream (optional)
Instructions
- First, cook the Impossible meat in a skillet on medium high for 10 minutes. You may choose to cook 1/4 of the package, or you can cook the whole package and save the rest in the fridge for later.
- While the meat is cooking, take the pinto beans and heat them up in a pot on medium heat. Add a pinch of salt and garlic powder to both the meat and beans.
- When the beans are hot and boiling, mash them with either a fork or a potato masher to make refried beans.
- Next, chop the lettuce and tomatoes, and cut 1/4 of a tortilla for the assembly.
- Once the meat and beans are ready, remove the meat from the skillet and keep the skillet on medium high.
- For the assembly, take your whole tortilla and spread the beans in a circle in the middle (about the size of the tostada shell).
- Next, sprinkle the meat on top of the beans, and the cheese on top of the meat.
- Lay your tostada shell on top of the cheese. Then top the tostada shell with lettuce, tomato, and sour cream.
- After that, place the 1/4 tortilla piece on the top, and start folding the other tortilla up around it, making pleats as you go.
- Carefully turn the Crunch Wrap upside down and place in your greased skillet for about 3 minutes on each side.
