This sweet and savory recipe has so many health benefits packed in to just a few simple ingredients!
Ingredients
- 1/2 block extra firm tofu
- 1/2 cup white onion
- 16oz bag tri-color coleslaw mix
- 5 tbsp soy sauce
- 2 tbsp brown sugar
- 1/2 tsp garlic powder
Instructions
- Start by taking half a block of extra firm tofu and cutting it into 1 inch cubes. You can drain your tofu beforehand if you need to, but the extra firm tofu that I use for this is already firm enough to hold up in the pan.
- Add the tofu and 1 tbsp of soy sauce to a skillet on medium heat for 10-15 minutes, flipping a few times to make sure all sides get golden brown and crispy.
- Next, chop the onion into pieces and add to the skillet along with the coleslaw mix, the rest of the soy sauce, the brown sugar, and the garlic powder.
- Mix together in the pan and cook for an additional 10 minutes on medium heat, stirring often to make sure it cooks evenly.
- Once the onion and coleslaw mix have softened and cooked through, it is ready to add to a bowl and enjoy!
