Vegan Potato Salad

This simple version of the classic potato salad is delicious, filling, and 100% vegan! Potato salad is perfect for picnics, cookouts, potlucks, a side dish, or even a quick lunch. Potatoes are one the most satiating food on the planet. They are packed with so many vitamins, minerals, and enough fiber to keep you feeling full for a long time, reducing those snack cravings in between meals. Most of this is actually found in the skin of the potato, so I prefer to always include the skin anytime I cook potatoes. The creaminess of this potato salad pairs great with the crunchy celery, the tangy dill, and the flavorful green onions. Wow your friends and family this summer by giving this recipe a try! Vegan Potato Salad

This simple version of the classic potato salad is delicious, filling, and 100% vegan!

Ingredients

  • 6 cups of Russet potatoes, about 6 potatoes
  • 1/2 cup vegenaise
  • 1/4 cup celery
  • 1/4 cup green onion
  • 2 tbsp dill relish
  • 1 tbsp yellow mustard
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp dill weed

Instructions

  1. Start by dicing the potatoes, skin on, into 1 inch cubes. Place the potatoes into a large pot of water, turn to medium heat, and bring to a boil.
  2. Let the potatoes boil for about 15 minutes, or until fork tender. Keep an eye on them and don't let them overcook or they will turn to mush.
  3. While they are cooking, dice the celery and green onion. An easy way to dice the celery is to cut the stalk down the middle, long ways, and then once you have two long pieces, then chop them up the same way you would the green onion.
  4. Once the potatoes are done, drain them and place them in a bowl. Set the bowl in the refrigerator for about 20 minutes.
  5. While that is cooling down, add all the other ingredients to a separate bowl and mix together well.
  6. Add the mixture to the potatoes and gently combine.
  7. Serve cold and enjoy!
