This creamy, cheesy, irresistible 8-layer dip is easy to make, fun to eat, and sure to satisfy any crowd!

Ingredients

  • 1 package Impossible Ground Beef
  • 1 15oz can pinto beans, undrained
  • 16oz sour cream
  • 20 grape tomatoes
  • 1/2 cup white onion
  • 4 avocados
  • 2 cups medium cheddar, shredded
  • 3 cups iceburg lettuce
  • 2 tbsp cilantro
  • 1/2 lime
  • 1oz packet taco seasoning
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • Sprinkle of black pepper

Instructions

  1. Start by taking the Impossible beef and placing it in a skillet at medium heat. Break it up with a spatula, and let it cook for 5-7 minutes or until brown, stirring frequently. Add a sprinkle of salt and pepper.
  2. In the meantime, place the pinto beans in a pot on medium and cook for 5-7 minutes, mashing them well with a fork to make refried beans. Add a sprinkle of salt.
  3. While those things are cooking, dice up the tomatoes and onion, and shred the lettuce (if it did not come that way).
  4. Then take the taco seasoning and mix it into the sour cream until they are fully combined.
  5. Next, make a quick guacamole by mashing up the avocado in a bowl, and adding in the cilantro, lime juice, red pepper flakes, and salt. Mix well.
  6. Finally, it is time to build your dip. First, spread the beans evenly along the bottom of an 9x13 casserole dish.
  7. Then add the impossible meat for the next layer. Followed by the sour cream, the guacamole, the cheddar cheese, the lettuce, the tomato, and finally the onion.
