Ingredients
- 1.5 cup cornmeal
- 1 cup all-purpose flour
- 1.25 cup unsweetened almond milk
- 1/4 cup Splenda brown sugar
- 1.5 cups medium shredded cheddar
- 1/3 cup melted butter
- 2 large eggs
- 2 tbsp diced jalapenos
- 1 tbsp baking powder
Instructions
- First, preheat the oven to 400 degrees Fahrenheit.
- Then mix the milk, eggs, and butter in a bowl with a hand mixer on medium high for 20 seconds.
- Next, add the cornmeal, flour, brown sugar, and baking powder to the wet mixture and mix on medium for 15 seconds, then high for 1 minute.
- Once everything is mixed well and there are no lumps, add in the jalapenos and cheddar and stir with a spoon.
- Pour the cornbread mixture into a 2 qt. baking dish (the one I use is 9"x7") and bake for 30 minutes.
- Cut into 6-8 pieces and enjoy!
