Vegan Basil Pesto
If you love the fresh, savory, flavorful taste of basil pesto but want a vegan version of the sauce, you have come to the right place! This recipe is quick and easy to make, and requires only a few ingredients and zero cooking. Basil pesto can be used to enhance so many recipes. A few of my favorite ways to use it is with a pasta sauce, a seasoning for veggies, or as a spread on a sandwich or wrap. The fresh basil, mixed with the garlic and vegan cheese, really makes this such an enjoyable way to spice up any dish. You can make a batch ahead of time and use it whenever you like. The flavors get even better as they sit and marinate. As with any pesto, the oil will separate so don’t forget to give it a stir before enjoying it!

Vegan Basil Pesto
Ingredients
- 1 cup fresh basil leaves
- 1/4 cup cashews
- 3 tsp nutritional yeast
- 1 tsp lemon juice
- 3 tbsp olive oil
- 2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Measure all ingredients and add to a food processor.
- Blend on high for 1 minute, or until well blended.
- Enjoy right away, or store in the fridge for up to a week. For best results, stir well before using. Oil will separate while it sits.
