Vegetarian Chorizo Stuffed Peppers

These delicious stuffed peppers are vegetarian, and packed full of flavor with only four ingredients!
Ingredients
- 2 large red bell peppers
- 2 cups plant-based chorizo
- 1 cup white rice
- 1.5 cup shredded mozzarella cheese
Instructions
- Start by cooking rice according to package.
- While the rice is cooking, slice bell peppers in half, top to bottom. Dispose of any seeds that are inside.
- Next, bring a medium pot of water to a boil and place all pepper halves into the water. Boil for 5-8 minutes until the peppers have become soft.
- While those are cooking, place chorizo in a skillet on medium heat and cook for 5 minutes, or until cooked through. Add rice to the skillet with chorizo and mix together well. Add 1/2 cup of mozzarella and mix in well.
- Place pepper halves on a non-greased pan, and fill evenly with the mixture.
- Sprinkle the rest of the mozzarella cheese evenly on top.
- Turn oven to broil on high, and place pan back in and broil on high for 1-2 minutes, until cheese on top is bubbly.
- Enjoy!
Notes
If you would like this to be a low carb meal, substitute the white rice for cauliflower rice. I recommend Green Giant brand.
