Pesto Zucchini Pasta

Basil pesto is one of my favorite things to use in recipes because it gives everything that fresh and savory flavor. Zucchini is just one of the MANY squash varieties that is not only versatile but also high in fiber and low in calories and carbs, keeping you full for a long time. You can’t beat that! This pasta is a must try!

  • Angel hair pasta

  • Zucchini

  • Grape tomatoes

  • Basil pesto

  • Grated parmesan cheese

  • Heavy whipping cream

  • Cream cheese

  • Garlic powder

  • Salt

Pesto Zucchini Pasta

Ingredients

  • 8 oz angel hair pasta (about 4 cups cooked)
  • 1 zucchini
  • 20 grape tomatoes
  • 1/2 cup grated Parmesan cheese
  • 3/4 cup heavy whipping cream
  • 4 oz cream cheese
  • 4 tbsp basil pesto
  • 1 tsp garlic powder

Instructions

  1. Start by boiling 2 quarts of water in a medium pot. Once water is boiling, cook the pasta according to the box, which should be about 5 minutes.
  2. While the pasta is cooking, carefully cut your zucchini into bite size pieces. An easy way to do this is to slice your zucchini about every 1/4 inch and then take those slices and cut them in half.
  3. Heat a skillet to medium high and add your zucchini and tomatoes. Cook for about 5 minutes, stirring often, or until everything has started to brown.
  4. Next, drain your noodles and add them back to the pot. Add the zucchini and tomatoes to the pot as well.
  5. Return your skillet to medium heat and add your cream cheese and heavy whipping cream.
  6. Once the cream cheese softens, whisk it in with the heavy cream as best as you can. Then add the parmesan cheese and garlic powder and stir until all is mixed well.
  7. Add your sauce to the pasta and mix everything together. When served, feel free to add another sprinkle of Parmesan to the top, and enjoy!
