I am always looking for ways to eat burgers, even as a vegetarian, and this might be my favorite! These oven baked fries are healthier than your normal deep fried versions, and this recipe does not lack in flavor, making this a great choice when you have a craving for fast food. This simple dish is perfect to bring to your next party, or to enjoy for lunch or dinner with the family!

Ingredients

  • 3 large russet potatoes
  • 1 cup Impossible Ground Beef
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup heavy whipping cream
  • 1/3 cup white onion
  • 1/3 cup grape tomatoes, diced (about 5-6 tomatoes)
  • 3 tbsp dill relish
  • 1 tbsp olive oil
  • 1 oz cream cheese
  • 1/2 tsp salt

Instructions

  1. Start by preheating your oven to 400 degrees Fahrenheit
  2. Next, wash off your potatoes and slice them into a french fry shape. The way I prefer to do this is to cut the ends off, slice the potato short-ways every inch or so to make round slices, then cut those across 2 or 3 times to make fries that aren't too long or thick.
  3. Then toss your potato slices with the olive oil and sprinkle with salt.
  4. Spread the slices out evenly on parchment paper, and bake for 30 minutes, giving them a quick stir halfway through. Feel free to cook them longer if you would like them more crispy.
  5. While the fries are cooking, add your Impossible beef to a skillet on medium high for 10 minutes, stirring often.
  6. If the lettuce needs to be shredded and/or the onion needs to be diced, do that as well.
  7. Next, add the cream cheese and heavy whipping cream to a pot on medium heat, and stir until the cream cheese has melted in with the heavy cream. Then stir in the cheddar cheese and let that melt until you have a smooth cheese sauce.
  8. Once the fries are done, take them out of the oven and top them with the Impossible beef and the cheese sauce.
  9. Next, evenly sprinkle on the dill relish, the onion, the lettuce, and then the tomatoes.
  10. Enjoy!
