Greek Pasta Salad

This delicious, simple, and colorful pasta salad is a must try if you love Greek cuisine! This recipe incorporates all the best flavors from fresh cucumber, to the sweet and savory sun-dried tomatoes! After traveling to Greece, I fell in love with the cuisine, and tzatziki especially stole my heart. So tzatziki is the main character in this pasta salad, setting the stage for a simple and delicious meal, side dish, or just snack!

Greek Pasta Salad

This creamy, greek inspired, pasta salad is a delicious meal or side dish that is quick and simple to make!

Ingredients

  • 12 oz box bowtie noodles
  • 1/2 cup chickpeas
  • 1/2 cup cucumber
  • 1/2 cup sliced black olives
  • 1/2 cup tzatziki
  • 1/3 cup sun dried tomatoes
  • 1/4 cup red onion
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • Sprinkle of shredded Parmesan (optional)

Instructions

  1. Cook bowtie noodles according to instructions on box.
  2. While noodles are cooking, dice red onion into small pieces (about half inch).
  3. Cut cucumber into 1 cm slices, then cut each slice both ways to make 4 triangle pieces.
  4. Slice sun-dried tomatoes into slices about a half inch wide.
  5. Once noodles are cooked and drained, run cold water over them until they are cooled down.
  6. Then place them in a bowl and add the chickpeas, cucumber, black olives, sun-dried tomatoes, red onion, tzatziki, garlic powder and salt and mix together well.
  7. Add a sprinkle of Parmesan, serve as a meal or as a side dish, and enjoy! Serve cold for best results.
