Cheeseburger Stuffed Mushrooms

These mushrooms hold the delicious flavors of an all-american cheeseburger into small, bite size treats! These make a wonderful snack, appetizer, or meal, and are quick and easy to make. Mushrooms have so many health benefits as well, some of which include lowering cholesterol, fighting cancer, and supporting a strong immune system. If that’s not enough, these little flavor bombs also provide a low carb way to enjoy a burger, even as a vegetarian. Win, win!

  • White onion

  • Dill relish

  • Shredded cheddar

  • Garlic powder

  • Salt

These mushrooms hold the delicious flavors of an all-american cheeseburger into small, bite size treats!

Ingredients

  • 12 whole white mushrooms
  • 1/2 cup Impossible Ground Beef
  • 1/2 cup shredded cheddar cheese
  • 3 oz cream cheese
  • 2 tbsp dill relish
  • 2 tbsp diced white onion
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • Sprinkle of black pepper

Instructions

  1. Start by preheating the oven to 375 degrees Fahrenheit.
  2. While the oven is preheating, add the impossible beef to a pan on medium heat and cook for 5-7 minutes, until brown.
  3. Then take the mushrooms and carefully cut out the stems and the middle area, making enough room to add the filling. Place them on a cooking sheet lined with aluminum foil and bake for 15 minutes.
  4. While the mushrooms are cooking, take the cream cheese and place in a bowl and microwave for 10-15 seconds, if not already softened. Also, make sure the onion is diced into tiny pieces.
  5. Next, add the beef, dill relish, onion, garlic powder, salt, and black pepper to the cream cheese and mix well.
  6. Once the mushrooms are done, take them out of the oven and pat them dry. They naturally release water when cooking.
  7. Fill each mushroom with the cream cheese mixture and then top with a sprinkle of shredded cheddar.
  8. Lastly, place the mushrooms back in the oven and broil on high for 2-3 minutes, or until cheese is melted on top.
  9. Take out of the oven and enjoy!
