Sweet Potato Gnocchi

This savory and sweet dish is a simple, yet irresistible version of the Italian dish known as gnocchi. While there are many ways to make gnocchi, this version is made with only sweet potato, oat flour, and cinnamon. Mix that with spinach and a savory, decadent alfredo sauce, and you’ve got a meal everyone can enjoy! Sweet Potato Gnocchi

This savory and sweet dish is a simple, yet irresistible version of the Italian dish known as gnocchi.

Ingredients

  • 3 cups fresh spinach
  • 2 cups sweet potato
  • 2 cups rolled oats
  • 1/2 cup grated Parmesan cheese
  • 3/4 cup heavy whipping cream
  • 4 oz. cream cheese
  • 1 tsp garlic powder
  • 1 tsp cinnamon

Instructions

  1. Start by taking a large sweet potato (or 2 small ones) and carefully poking a couple holes in both sides with a knife. Then wrap the sweet potato with a wet paper towel to help hold the moisture in.
  2. Microwave for 2 minutes on each side, then give it a squeeze to see if it is tender on the inside. If not, continue to microwave in 2 minute increments.
  3. Once done, take the sweet potato out and set it aside to let it cool down.
  4. Next, take 2 cups of rolled oats and add them to a food processor. Blend on high for 1 minute to create an oat flour.
  5. Take the oat flour and add to a bowl, along with the cinnamon. Then, peel the skin from the sweet potato and discard. Add the potato to the bowl. (Check to make sure it is equivalent to 2 cups worth).
  6. Mix until everything is well combined and it forms a type of dough.
  7. Next take the dough and separate it into 4 balls. Take these balls and roll them out with your hand to form logs that are about 1 inch across.
  8. Take a knife and cut these every inch and a half to make your gnocchi pieces.
  9. Heat a skillet to medium high and cook these gnocchi pieces for 5-7 minutes on each side, or until they have browned. (You may have to cook in 2 batches depending on the size of your skillet).
  10. While those are cooking, take a pot and turn it to medium heat. Add the cream cheese and heavy whipping cream to the pot. Once the cream cheese starts to soften, mix it in with the heavy cream the best you can. I find it helpful to use a fork to mash up the cream cheese.
  11. Once this is mixed together, add the Parmesan cheese and garlic powder. Mix everything well to create the Alfredo sauce.
  12. Next add the spinach to the sauce and let it cook down by stirring for a couple minutes.
  13. Once all the gnocchi has been cooked, take the sauce mixture and add it to the skillet and combine everything.
  14. Serve in bowls with some tasty garlic bread or toast and enjoy!
