Vegan Cheesy Ramen

Ramen is finally getting the recognition it deserves as a pasta with this delicious and satisfying dish! These simple, quick, and versatile noodles pair perfectly with the savory vegan cheese sauce and crispy tofu! This is a weekly staple in my house, and I wouldn’t be surprised if it becomes a family favorite for you as well!

Vegan Cheesy Ramen

Vegan Cheesy Ramen

These simple noodles mixed with the savory vegan cheese sauce and crispy tofu will leave you wanting seconds!

Ingredients

  • 2 packages dry ramen noodles
  • 2 cups brocccoli
  • 1 cup extra firm tofu
  • 1/2 cup Vegan Cheese Sauce
  • 1 green onion
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Olive oil spray

Instructions

  1. Take tofu out of package and pat dry. Slice into 1 inch cubes and add to an air fryer. Spray tofu with a little olive oil spray and sprinkle garlic powder, salt and pepper.
  2. Cook at 400 degrees for 10 minutes, take tofu out and shake up, then cook for an additional 10 minutes.
  3. While tofu is cooking, heat a skillet to medium heat. Add broccoli and cook for 10 minutes, or until the edges get crispy and start to brown.
  4. Next, bring a medium pot of water to a boil. Add ramen noodles (discard the seasoning packet) and cook for 2 minutes, or until tender. Drain and add noodles back to the pot.
  5. Over low heat, add tofu, broccoli, and vegan cheese sauce to the noodles and stir until everything is combined.
  6. Slice green onion into small slices.
  7. Serve in a bowl, add green onion on top, and enjoy!

Notes

Any dry ramen noodles will work as long as you discard the seasoning, which is the part that makes it non-vegetarian.
