This recipe is a simple and delicious vegan take on a classic chicken salad!
Ingredients
- 2 15oz cans chickpeas
- 1/2 cup vegenaise
- 1/2 cup black grapes
- 1/3 cup diced red onion
- 1/3 cup celery, or 1 stalk
- 1 tsp dill
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp pepper
Instructions
- In a large mixing bowl, add chickpeas and use a potato masher to mash them up. (Work with them until about half of them are mashed up. This just helps everything stick together and creates a less mess when it comes time to eat).
- Next, dice red onion and celery into small pieces (about a half inch). Then slice grapes into halves.
- Add vegenaise, red onion, celery, grapes, dill, garlic powder, salt and pepper to the chickpeas and mix until well combined.
- Enjoy on a sandwich, pita, or with crackers! Serve cold for best results.
