Vegan Cheesy Ramen
Ramen is finally getting the recognition it deserves as a pasta with this delicious and satisfying dish! These simple, quick, and versatile noodles pair perfectly with the savory vegan cheese sauce and crispy tofu! This is a weekly staple in my house, and I wouldn’t be surprised if it becomes a family favorite for you as well!

Vegan Cheesy Ramen

These simple noodles mixed with the savory vegan cheese sauce and crispy tofu will leave you wanting seconds!
Ingredients
- 2 packages dry ramen noodles
- 2 cups brocccoli
- 1 cup extra firm tofu
- 1/2 cup Vegan Cheese Sauce
- 1 green onion
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- Olive oil spray
Instructions
- Take tofu out of package and pat dry. Slice into 1 inch cubes and add to an air fryer. Spray tofu with a little olive oil spray and sprinkle garlic powder, salt and pepper.
- Cook at 400 degrees for 10 minutes, take tofu out and shake up, then cook for an additional 10 minutes.
- While tofu is cooking, heat a skillet to medium heat. Add broccoli and cook for 10 minutes, or until the edges get crispy and start to brown.
- Next, bring a medium pot of water to a boil. Add ramen noodles (discard the seasoning packet) and cook for 2 minutes, or until tender. Drain and add noodles back to the pot.
- Over low heat, add tofu, broccoli, and vegan cheese sauce to the noodles and stir until everything is combined.
- Slice green onion into small slices.
- Serve in a bowl, add green onion on top, and enjoy!
Notes
Any dry ramen noodles will work as long as you discard the seasoning, which is the part that makes it non-vegetarian.
