Mozzarella Bombs

These can be enjoyed as a snack, appetizer, or even side dish to your favorite pasta or pizza. There’s no wrong way to eat mozzarella bombs! And they are low-carb!

Cream cheese
Egg
Butter
Garlic powder

Ingredients
- 1.25 cup almond flour
- 1.5 cup shredded mozzarella cheese
- 2 ounces cream cheese
- 1 egg
- 2 mozzarella string cheese sticks
- 1 tbsp melted butter
- 1 tbsp grated Parmesan cheese (optional)
- Sprinkle of garlic powder
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- Add almond flour, cream cheese, and mozzarella cheese into a large bowl and place in the microwave for 30 seconds.
- Take out, and use a spoon to combine as well as you can.
- Place back in the microwave for another 30 seconds.
- Take out and add the egg.
- Using the same spoon, work the mixture together until it forms a ball of dough. For best results, use the spoon to fold mixture in half and press together, and repeat this process over until it is well combined.
- Next, separate the dough into 6 smaller balls.
- Cut both the string cheese sticks into 3 even pieces. Place them in each of the dough balls and cover. Roll in your hand to create the round shape. Make sure the cheese is well covered. (You may wet your hands to help the dough from sticking to them).
- Place each ball on a cooking sheet lined with parchment paper.
- Bake for 15-20 minutes, or until the tops start to brown.
- Take out of the oven and add melted butter to the top. Sprinkle with garlic powder and Parmesan cheese, and enjoy while hot!
