Ingredients

  • 1 russet potato, or 1 cup diced
  • 1 sweet potato, or 1 cup diced
  • 1/2 cup white onion
  • 1/2 cup green bell pepper
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Sriracha (optional)

Instructions

  1. First, dice the potato and sweet potato into 1 inch pieces and add to a skillet on medium high heat. Cook for 10 minutes, stirring occasionally.
  2. While the potatoes are cooking, dice the onion and bell pepper. Add to the skillet and cook for an additional 10 minutes while stirring occasionally.
  3. Divide the potato, pepper, and onion mixture into 2 bowls and set aside.
  4. Turn the heat down to medium and crack an egg into the skillet. Using a spatula, break the yolk. Add half the cheese (about 1/4 cup) on top of the egg and let cook for 30 seconds.
  5. Then take your spatula and carefully fold the egg in half. Let it cook for an additional 10 seconds on each side.
  6. Add the fried egg to one of the bowls, and repeat with the second egg, adding it to the second bowl.
  7. Top each bowl with a sprinkle of salt, pepper, and sriracha (all optional) and enjoy!
