Mushroom Tofu Ramen

Ingredients
- 6 cups vegetable broth
- 2 packets of ramen noodles (without the seasoning)
- 1/2 block extra firm tofu
- 1 large carrot
- 2 cups spinach
- 3 large white mushrooms
- 1 tbsp olive oil
- 1 tbsp diced jalapenos
- 2 green onions
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- Sprinkle of cayenne pepper
Instructions
- Start by adding the olive oil to a large pot on high heat.
- Chop the tofu into 1 inch cubes, and slice the carrot and mushrooms. Add these to the pot.
- Let that cook on high heat for 5-7 minutes, or until the tofu has browned on all sides.
- Next, turn the heat down to medium and add the spinach and jalapenos to the pot and cook for 2 minutes, or until the spinach has cooked down.
- Then add the vegetable broth, ramen (discard the seasoning packet), garlic powder, salt, black pepper, onion powder and cayenne pepper to the pot and let the noodles cook. This should only take 2-3 minutes.
- Finally, divide into bowls, chop up the green onion and add to the top, and enjoy!
