Caprese Sliders

These sliders are packed full of fresh flavors, and so simple and inexpensive to make! Who doesn’t love the convenience of mini sandwiches that only require one hand to eat? Sliders are perfect for almost any occasion, including parties, potlucks, or even family lunch or dinner. This recipe combines basil, tomato, mozzarella, and spinach on sweet Hawaiian rolls for a treat so delicious even meat eaters will devour them! Even better, these require little effort to make and minimal clean up! Try them for yourself!

These sliders are packed full of fresh flavors, and so simple and inexpensive to make!

Ingredients

  • 12 Hawaiian rolls
  • 1/4 cup basil pesto
  • 6 slices mozzarella cheese
  • 2 Roma tomatoes
  • 24 spinach leaves, or about 1 cup
  • 2 tbsp butter
  • 1/4 tsp garlic powder
  • 1/4 tsp dried basil

Instructions

  1. Start by preheating the oven to 350 degrees.
  2. Next, take Hawaiian rolls and carefully slice down the middle of the buns to create top and bottom buns. I find it easier to first separate them in half and cut the 2 halves, then place them back together.
  3. Place the bottom buns on a baking sheet covered with aluminum foil or parchment paper. Take the pesto and spread evenly across the 12 bottom buns.
  4. Next evenly place the mozzarella cheese across the buns.
  5. Slice the Roma tomatoes into 12 slices total. Place one slice on each bun. Then add the spinach on top of that. I usually add a couple leaves to each bun.
  6. Place the top layer of buns on top of the sandwiches. Then place in the oven for 10 minutes.
  7. Melt butter in a small bowl for 15-20 seconds. Then add the garlic powder and basil and mix together.
  8. After 10 minutes, take the rolls out of the oven and using a brush, spread half the butter evenly over the rolls. Then return them to the oven for 5 more minutes.
  9. Once you remove the rolls from the oven, brush them with the remainder of the butter, pull them apart and enjoy!
