I love a nice, creamy soup, and I can honestly say this is the perfect recipe! This soup is so easy to make, and there is no need to worry about what season it is, soup is meant to be enjoyed year around!

Ingredients
- 3 cups broccoli
- 2 cups heavy whipping cream
- 2 cups vegetable broth
- 2.5 cups shredded cheddar, medium
- 2 oz cream cheese
- 1 tbsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp pepper
Instructions
- Start by heating a pot to medium high heat.
- Take broccoli and break it into small pieces, with a few larger ones in there as well.
- Cook broccoli for 5 minutes, stirring occasionally to get all sides slightly browned and crispy.
- Then turn heat down to low and add cream cheese. You want to mix the cream cheese in with the broccoli as much as possible. This will help prevent lumps in your soup.
- After cream cheese has been mixed in well, add the heavy whipping cream, vegetable broth, garlic powder, onion powder, salt and pepper and stir.
- Once everything is mixed in well, add the cheddar cheese and stir until fully melted.
- Serve immediately and enjoy!
