Biscuit Pot Pie
This is the easiest and most delicious vegetarian version of a Chicken Pot Pie! I think everyone can agree that a classic pot pie is one of the most comforting meals. This recipe has all the wholesome, savory flavors of the old fashioned recipe, but made quick and simple for when you are pinched for time, or just want a lazy dinner! By using frozen vegetables, you still get all the nutrients they offer, and the plant based chicken provides an excellent amount of protein. And who doesn’t love flaky biscuits? Think of this as the dinner version of biscuits and gravy, another southern favorite! And this is definitely a crowd pleaser, so share it with the whole family!
What Ingredients Do I Need?
Frozen mixed vegetables
Vegetable broth
Unsweetened oat milk
White onion
All-purpose flour
Butter
Black pepper
Salt
Biscuit Pot Pie

Ingredients
- 1 bag of plant based chicken strips
- 1 bag of frozen mixed vegetables
- 1.5 cups vegetable broth
- 1 cup unsweetened oat milk
- 1/2 cup white onion
- 1/4 cup butter (I use plant based)
- 1/4 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- First, preheat the oven to 350 degrees.
- Next, melt your butter in a large skillet on medium high. Dice the onion and add to the butter to saute for 2 minutes.
- Then add the flour, salt, and pepper to the skillet and mix in well with the onions.
- Add the frozen chicken and vegetables next, and let cook for 5 minutes, stirring occasionally. *Optional - once the chicken is tender, you can cut it up into smaller pieces with a fork if you prefer. I usually cut each strip into half or thirds.
- Next, add broth and oat milk to the pan and bring to a boil. Once it starts to boil, cover and let simmer for 10 minutes.
- After it has simmered, pour everything into a 2L casserole dish (or something similar size). Open your biscuits and place them evenly across the top.
- Place your dish in the oven, uncovered, and bake for 30 minutes, or until the biscuits are golden brown.
- Remove from the oven and let sit for 10 minutes before serving.
