Air Fryer Taquitos

These fun, simple, and filling taquitos are the perfect recipe to whip up for lunch, dinner, appetizers, or finger foods! Taquitos are fun to eat, easy to dip, and require no silverware, making them perfect for the whole family. While taquitos are usually deep fried, using an air fryer can save you a significant amount of calories, and still provide you with the warm, crunchy, shell you are looking for!

Ingredients

  • 6 large flour tortillas
  • 1 cup corn
  • 1 cup black beans
  • 1/3 cup shredded cheddar cheese
  • 1/3 cup shredded mozzarella cheese
  • 1/4 cup white onion
  • 2 tbsp diced jalapenos
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp salt

Instructions

  1. Start by dicing the onion into small pieces. If you are using fresh jalapenos, you will need to do the same with those.
  2. Next, rinse your black beans.
  3. Add the corn, beans, cheese, onion, jalapenos, and seasonings into a bowl and mix well.
  4. Take each tortilla and add some of the filling down the middle. Roll it up tightly, making sure you tuck the sides in so that the filling does not fall out.
  5. Once they are all filled, carefully cut each in half at an angle.
  6. Finally, place them in your air fryer basket and cook on 400 degrees for 7 minutes. You may have to cook in two batches, unless your air fryer can hold them all.
  7. Enjoy with your favorite dip!
