Spicy Coconut Curry Ramen

If you are a curry lover, you have to try this sweet, spicy, dangerously flavorful coconut curry ramen recipe! Curry is known for it’s unique spices that all come together beautifully to create a party for the taste buds. While there are many different types of curry, this recipe most closely resembles a silky Thai coconut curry, which is my favorite kind! This recipe is unique because it takes curry and ramen, two amazing but different dishes, and combines them in the most satisfying way. Despite all of the ingredients and spices, this is a very simple and quick dish to make. Whoever said ramen was boring, needs to give this recipe a try! It is one of my all time favorites, and I won’t be surprised if it becomes one of yours as well.

What Ingredients Do I Need?

  • Ramen noodles

  • Extra firm tofu

  • Carrot

  • Mushrooms

  • White onion

  • Jalapeno

  • Coconut milk

  • Vegetable broth

  • Brown sugar

  • Curry powder

  • Cayenne pepper

  • Salt

  • Black pepper

  • Garlic powder

  • Cinnamon

  • Cumin

  • Ginger

Spicy Coconut Curry Ramen

If you are a curry lover, you have to try this sweet, spicy, dangerously flavorful ramen recipe!

Ingredients

  • 2 packets of ramen noodles (no seasoning packet)
  • 1/2 block of extra firm tofu
  • 1 large carrot
  • 4 white mushrooms
  • 1/2 cup white onion
  • 2 tbsp diced jalapenos
  • 4 cups vegetable broth
  • 1/2 cup unsweetened coconut milk
  • 2 tbsp brown sugar
  • 1 tsp olive oil
  • 1 tsp curry powder
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/2 tsp cayenne
  • 1/2 tsp cinnamon
  • 1/4 tsp cumin
  • 1/4 tsp ginger

Instructions

  1. Start by adding the olive oil to a pot on high heat.
  2. Chop the tofu into 1 inch cubes, and slice the carrot and mushrooms. Add these to the pot.
  3. Let that cook on high heat for 10 minutes, or until the tofu has browned on all sides.
  4. Next, turn the heat down to medium and add the onion and jalapenos to the pot and cook for 2 more minutes.
  5. Then add the vegetable broth, coconut milk, ramen (discard the seasoning packet), and all the rest of the ingredients to the pot and let the noodles cook for 5 minutes.
  6. Serve in bowls and enjoy!
