Chocolate Banana Bites

These chocolate banana bites are a simple, healthy treat when you are craving something sweet!

Ingredients

  • 2 bananas
  • 1 cup dark chocolate chips
  • 1/4 cup peanuts
  • 2 tsp coconut oil

Instructions

  1. Start by peeling the bananas, and cut them into about 1 inch slices. There should be roughly 16 slices total.
  2. Next, place the peanuts in a Ziploc bag and crush them into smaller pieces.
  3. Then place the dark chocolate chips and coconut oil in a microwave safe bowl. Microwave for 30 seconds, stir, then microwave again in 15 second intervals, stirring in between, until everything is melted. It usually takes me a total of 1 minute. Do not microwave for too long or it will burn.
  4. Once your chocolate is smooth, take each banana slice and dip it in the chocolate until coated. I use a couple toothpicks to do this, but you could use a fork if you are gentle. Place them on a parchment paper covered tray or plate.
  5. Stop about halfway through and sprinkle with the crushed peanuts, before they start to harden. Then finish the other half the same way.
  6. Either place them in the refrigerator for 1 hour, or the freezer for 30 mins to let them harden all the way.
  7. Enjoy!
