Egg White Bites

These simple, veggie filled, egg white bites make the perfect on-the-go breakfast recipe! They are packed with spinach, red peppers, onion, and cheese. Using the egg white only, and not the yolk, they are lower in fat and cholesterol, but also, I just prefer the taste and fluffy texture when made this way. You will still get protein from the veggies and the cheese, and the combination of these ingredients is delicious! One of the best things about this recipe is how quick and easy it is to meal prep for the week! You can prepare these for yourself or the whole family to enjoy for breakfast or even a snack during the busy work week. If you are a fan of the egg bites at Starbucks, these are similar but will save you a lot of time and money! So what are you waiting for?

Ingredients

  • 32oz carton of liquid egg whites
  • 1 cup shredded mozzarella cheese
  • 1/2 cup red bell pepper
  • 1/2 cup fresh spinach
  • 1/4 cup white onion
  • 1 tsp black pepper
  • 1 tsp salt

Instructions

  1. Start by preheating the oven to 350 degrees Fahrenheit, and grabbing a non-stick muffin pan or preparing one with cooking spray.
  2. While the oven is heating, finely dice your red pepper and onion and set aside. Do the same with your fresh spinach, slicing it into strips or dicing it into small pieces.
  3. Next, take half of your mozzarella cheese and sprinkle some to each of the twelve individual pockets, lightly covering the bottoms.
  4. Next, evenly divide your red pepper, onion, and spinach into all twelve pockets.
  5. Then pour the egg whites into each pocket, filling them about 3/4 of the way to the top (you won't use the whole carton).
  6. Use the other half of the mozzarella to sprinkle on top, along with a sprinkle of salt and black pepper to each.
  7. Bake for 25 minutes, then remove from the oven and let them sit for 5 minutes.
  8. Enjoy!
