Egg and Hummus Toast

This savory and spicy hummus toast will put the ever-so-popular avocado toast to shame! Don’t get me wrong, avocado toast is a classic, and full of fantastic health benefits - but this recipe kicks the flavor up a notch. The hummus is creamy, and pairs perfectly with the fried egg, spicy sriracha, and green onions! This recipe is not only satisfying, but the high fiber content will leave you feeling full, content, and ready to take on the day!

  • Everything Bagel seasoning

Egg and Hummus Toast

This savory and spicy hummus toast will put the ever-so-popular avocado toast to shame!

Ingredients

  • 2 slices of multi-grain bread
  • 6 tbsp garlic hummus
  • 2 large eggs
  • 2 tbsp green onion
  • Sriracha
  • Everything Bagel seasoning
Garlic Hummus
  • 1 15oz can chickpeas
  • 2 tbsp tahini
  • 2 tbsp minced garlic
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/4 cup cold water
  • 1/2 tsp salt

Instructions

  1. First, place your bread in the toaster until it is toasted to your preference.
  2. While your bread is toasting, add all the ingredients for the hummus into a food processor and blend for 1-2 minutes until it becomes smooth.
  3. Spread hummus evenly on both pieces of toast.
  4. Next, heat a small skillet to medium heat. Crack one egg into the skillet and break up the yolk so it spreads out. Sprinkle with salt and pepper
  5. Let it cook that way for about 20 seconds, then using your spatula, fold the egg in half. Let it cook for another 10 seconds on each side. Do the same for the other egg.
  6. Place one egg on each piece of toast, drizzle with sriracha, then top with green onions and Everything Bagel seasoning. Enjoy!
